Hyogo oysters, particularly those from Murotsu Bay and Sakoshi Bay, are renowned for their plump, creamy flesh and briny-sweet taste, making them a prized delicacy in Japan. Murotsu Bay is sandwiched between Ibo River and Chikusa River the bay is rich in phytoplankton that is why the size of the 12-month oysters (Crassostrea gigas) grow largest.
